Mini Lobster Rolls

Delicious, fun, and an excellent way to spread the lobster joy amongst several people.

Serves 4

Ingredients

  • 250g lobster meat, cooked

  • 100g whole egg mayonnaise

  • 1 spring onion, very thinly sliced

  • 2 French shallots, very finely diced

  • 1 celery stalk, including leaves, very finely diced

  • 1 tbsp chopped tarragon

  • 3 tbsp finely chopped chives

  • lemon juice

  • 4 small brioche buns

  • Butter

  • Lemon wedges

To serve

  • Salted potato crisps, lemon wedges and Tobasco or tomato sauce

Method

Dice the lobster meat in 1cm dice. Place in a bowl with the mayonnaise, spring onion, French shallot, celery, tarragon and half the chives. Mix.

Season to taste with salt, pepper, and lemon juice. Cut the brioche buns in half. Lightly toast.  Butter the cut sides. Fill with the lobster mix. Garnish with chives and wedges of lemon.

Serve with a side of salted potato chips and sauce
