Wakame Salad

Serves 1

 

40 g dried wakame

2 tbsp rice vinegar

2 tbsp soy sauce

1 tsp brown sugar

1 tsp grated ginger

1 tsp grated garlic

1-2 tsp chilli flakes

1 tsp white sesame seeds

Rehydrate the Wakame by placing it in a bowl and covering with water. Let it sit for approximately 5 minutes. Once ready it will be soft and vibrant green in colour.

Whilst the seaweed is soaking, mix your dressing. In a bowl whisk together the soy sauce, rice vinegar, sugar, ginger, garlic and chilli flakes. Once the wakame is rehydrated, strain out the water and rinse. Place wakame on a paper towel to absorb as much water as possible, then roughly chop.

Combine wakame with the dressing and finish with a sprinkle of sesame seeds on top. Serve immediately!
